Super Bowl Nosh: Cheese Bourekas With Buffalo Sauce

Whether you watch the Superbowl for the football, the commercials or the half-time show (no judgement here!), you need to have delicious snacks on hand. Cue the bourekas! Bourekas are popular pastries in Israel — there you’ll find them filled with cheese, potatoes, mushrooms, or eggplants and they’re sold at almost every corner stand and market. We cut ours into football shapes, filled them with a feta cheese mixture and served them with buffalo dipping sauce. They’re a total touchdown for your upcoming party!

Superbowl Bourekas: Cheese Bourekas With Buffalo Dipping Sauce

Cheese Bourekas With Buffalo Sauce

Makes 24 bourekas

Ingredients:
4 sheets puff pastry dough (defrosted)
1 cup crumbled feta cheese
1/3 cup ricotta cheese
1 egg + 1 egg yolk (divided)
1 tsp pepper
Parchment paper
Sesame seeds (optional)
Buffalo sauce

Recipe:

Preheat the oven to 350 degrees. Combine the feta cheese, ricotta cheese, egg and pepper together in a small bowl and set aside.

Gently roll out one sheet of the puff pastry dough on a lightly floured surface to create a 12″ x 12″ square. Use a small sharp knife to cut out a football shape, roughly 4″ wide and 3″ tall. Use this cut-out as your stencil for the remaining dough. You should be able to get 12 footballs from one sheet of dough. Repeat with the remaining sheets of dough.

Place 1 tsp of the cheese filling in the center of each football. Top with another football shape and use a fork to crimp the edges and seal the pastry. Repeat until all pastries have been sealed.

Place pastries on 2 cookie sheets lined with parchment paper. Leave 1-2 inches between each pastry in case they spread. Mix the egg yolk with 2 tablespoons of water and brush the pastries with a thin coat of the egg wash. Sprinkle with sesame seeds if you’d like.

Bake for 15-20 minutes until golden brown. After the pastries have cooled, take a small, sharp knife and cut the football “stitching.”

Serve with buffalo sauce for dipping and enjoy!

    These look so tasty! I don’t think I have enjoyed noshing on bourekas since I was in Israel. I’m not much for the football when the Ravens aren’t playing so I am looking forward to the commercials and the food!
